Spring Rice Salad

3 cups cooked Rice
1 cup chopped cucumbers
½ cup chopped tomatoes
¼ cup of sliced black olives
1 TBSP chopped fresh parsley
Your favorite Italian salad dressing (I like Good Seasons)
Salt and pepper to taste
Optional: chopped scallions, bell peppers, or corn

Cook and cool the rice.
Chop the veggies.
Mix veggies and rice in a large salad bowl.
Add the dressing and coat evenly.
